CHOCOLATE CHUNK CHICKPEA COOKIES

INGREDIENTS:
▫️1 can chickpeas, rinsed and drained
▫️50g smooth peanut butter
▫️30g maple syrup/ honey/ agave
▫️½ teaspoon baking soda
▫️½ teaspoon baking powder
▫️35g dark chocolate, cut into chunks
▫️ ½ teaspoon vanilla extract/ essence/ drops
▫️Pinch of salt, optional

METHOD:

▫️Preheat the oven to 220°C degrees.
▫️Add the chickpeas and nut butter into a food processor and blend on high for 1 minute.
▫️Add the maple syrup and vanilla and continue to blend for 2-3 minutes, scraping down the sides every minute. You want the mixture to be entirely free of any lumps.
▫️Add the baking soda, baking powder, and salt and blend for 30 seconds.
▫️Mix in chocolate chips.
▫️Shape into cookies and make for 12-14 minutes.
