CHRISTMAS LOG
INGREDIENTS:
▪️100g of digestive cookies
▪️1 cup oats
▪️1/4 cup cacao powder
▪️1 tsp cinnamon
▪️1/2 cup walnuts
▪️1/2 cup hazelnuts
▪️1/2 cup almonds
▪️1/2 cup dried cherries
▪️1/2 cup raisins
▪️200g chai spiced almond butter
▪️1/4 cup + 1 tbsp baileys (optional)
▪️1 tbsp coconut oil
▪️2 tbsp maple syrup
▪️2 tbsp water
▪️1 tsp vanilla extract
▪️Chocolate, melted
▪️Sprinkles (optional)
METHOD
1. On a sheet pan add the nuts and roast them for 7 minutes or until golden. Let them cool and chop into small pieces.
2. In a food processor or blender crush the biscuits and oats.
3. Transfer the mixture into a separate bowl and add the cacao powder, cinnamon, raisins and dried cherries. Mix well.
4. In a separate bowl, add the nut butter, baileys, maple syrup, vanilla extract, coconut oil and water. Mix until you have a sticky mixture .
5. Add the mixture on a parchment paper and roll it into a cylinder shape.
6. Freeze for 20 minutes.
7. Cover the log with melted chocolate and sprinkles. Enjoy!
