LOADED SWEET POTATO NACHOS WITH SPICY PEANUT SAUCE
INGREDIENTS:
▫️2 medium to large sweet potatoes
▫️1 1/2 tbsp olive oil
▫️Toppings: avocado, diced tomatoes, beans, red pepper, jalapeños, vegan cheese
Spicy peanut sauce:
▫️1/2 cup smooth peanut butter
▫️1 lime juice
▫️1 tbsp maple syrup
▫️1 tsp chillies
▫️2–8 tbsp of water to thin
METHOD:

METHOD:
▫️Preheat oven to 200C.
▫️Wash, peel, and slice sweet potatoes into very thin round slices.
▫️Place sweet potato slices in a large bowl and toss with olive oil, salt and pepper.
▫️Arrange sweet potatoes on a baking sheet and place in the oven.
▫️Roast for 15 minutes until soft and crispy.
▫️While potatoes are roasting, mix the peanut sauce ingredients together.
▫️When potatoes are done, top with your favorite toppings and drizzle the sauce on top!
▫️Serve with salsa and source cream.
