PEANUT BUTTER CHOC COOKIES


INGREDIENTS:

▪️1 egg
▪️1 ½ tsp vanilla extract
▪️1 tbsp coconut oil (or olive oil)
▪️⅓ cup coconut sugar (or brown sugar) 
▪️1 tbsp honey (or maple syrup)
▪️¼ cup peanut butter 
▪️½ cup + 3 tbsp cacao powder

 

1. Preheat your oven to 180°C (350°F) and line a baking tray with parchment paper.
2. In a medium bowl, whisk together the egg, vanilla, coconut oil, coconut sugar, honey, and peanut butter until smooth.
3. Add the cacao powder and mix until a thick, sticky dough forms.
4. Wet your hands lightly with water, roll the dough into balls, and place them on the prepared baking tray.
5. Wet a fork and gently press down each cookie to flatten slightly.
6. Bake for 15 minutes, then let them cool on the tray before removing.
