PEANUT RICE NOODLE SALAD

INGREDIENTS:
▫️100 g rice noodles
▫️1 cucumber
▫️1.5 cup shredded red cabbage
▫️1 cup shredded carrot
▫️1 cup edamame
▫️1/2 red bell pepper
▫️small bunch of cilantro

Dressing:
▫️2 tbsp 100% smooth peanut butter
▫️1 clove garlic
▫️1 tbsp hot sauce
▫️2 tbs soy sauce
▫️1 lime, juiced
▫️2 tsp maple syrup
▫️1 tsp toasted sesame oil
▫️salt, pepper
▫️1/2 cup warm water

METHOD:
▫️Cut all the veggies in strips.
▫️You can use any veggies you have available in your fridge.
▫️Add noodles to a bowl.
▫️Add the veggies.
▫️Mix together in a separate bowl the dressing ingredients.
▫️Dressing needs to be a bit runny.
▫️Add to the noodles and veg.
▫️Give it a nice mix.
▫️Eat right away or refrigerate.
