PUMPKIN SPICE CHEESECAKE
INGREDIENTS
FOR THE CRUST:
▪️3 digestive biscuits
▪️1/2 cup pecans
▪️1 cup oats
▪️2 tbsp MUNCH A BUNCH pumpkin spice peanut butter
▪️2 tbsp maple syrup
▪️1 tbsp coconut oil
▪️1 tsp vanilla
FOR THE CHEESECAKE:
▪️1/2 cup cream
▪️1 cup yogurt
▪️1 cup MUNCH A BUNCH pumpkin spice peanut butter
▪️1 tsp vanilla
▪️1 tbsp maple syrup
METHOD
1. In a bowl whisk the cream for about 3 to 4 minutes. Add the vanilla and yogurt.
2. Add the pumpkin spice peanut butter and keep mixing until it’s thick and creamy.
3. Refrigerate for 2 hours.
4. In a blender or food processor, add the dry ingredients and blend for a few seconds.
5. Add the wet ingredients and blend again.
6. In small glass bowls, add the crust ingredients and refrigerate for one hour.
