RAW WHITE CHOCOLATE LEMON BARS
INGREDIENTS:
▫️2 cups oat flour (blended oats)
▫️1 cup cashews
▫️1 cup desiccated coconut
▫️1 tbsp chia seeds or poppy seeds
▫️Lemon zest from 2 lemons
▫️1/2 cup lemon juice
▫️ 2 tsp vanilla extract
▫️1/4 cup coconut cashew butter
▫️1/4 cup honey or maple syrup
▫️2 cups oat flour (blended oats)

▫️ 2 tsp vanilla extract
▫️1/4 cup coconut cashew butter
▫️1/4 cup honey or maple syrup

▫️white chocolate
▫️1 tbsp coconut oil
METHOD:

1. In a food processor or blender add the oats and cashews. Blend until it becomes a flour consistency.
2. Transfer the 'flour' into a bowl and add the coconut, chia seeds and lemon zest. Mix well.
3. Add the lemon juice and mix again.
4. Add the vanilla, honey and the coconut cashew butter. Mix well.
5. Freeze for 20 minutes
6. Melt the white chocolate and coconut oil. (I added a bit more chia seeds and lemon zest to melt together)
7. Add the white chocolate on top let it sit for 20 minutes in the freezer and cut them into bars. Enjoy!
