WHITE CHOC COCONUT ZING BALLS

INGREDIENTS:
▪️1 cup cashews
▪️1 cup dessicatted coconut
▪️½ cup oat flour
▪️2 tbsp lemon juice
▪️Zest of 1 lemon
▪️2 tbsp maple syrup (or honey)
▪️¼ cup peanut butter
▪️White chocolate (for coating)
▪️Extra dessicatted coconut (for topping)
1. In a food processor or blender, combine the cashews, coconut, and oat flour. Blend until the mixture reaches a fine, flour like consistency.
2. Add the lemon juice, lemon zest, maple syrup, and peanut butter. Blend again until everything is well combined and a dough forms.
3. Roll the mixture into small balls and refrigerate for about 30 minutes to firm up.
4. Dip each ball into melted white chocolate, then sprinkle with shredded coconut.
5. Chill again until the chocolate sets. Enjoy!
