WHITE CHOCOLATE COCONUT CUPS
INGREDIENTS:
▪️1 cup chickpeas
▪️ 1 cup almond flour (ground almonds)
▪️ 1 cup desiccated coconut
▪️ 1/3 cup maple syrup (or honey)
▪️ 1/3 white chocolate
▪️1 scoop protein powder (or substitute with desiccated coconut)
▪️ 1 tsp vanilla extract
▪️ white chocolate, melted
▪️ coconut flakes
METHOD:
1. In a blender, add chickpeas, almond flour, protein powder and coconut and mix well.
2. Add maple syrup, white chocolate and vanilla extract and blend again.
3. Place some mixture in the base of your mould and freeze for 30 minutes.
4. Top with white chocolate and coconut flakes and freeze for around 1 hour.
